03 — Proof

What is measured, and what is not.

The hours and the setup time are catalog math at a stated volume. Production telemetry is not published yet, and nothing here pretends otherwise.

Catalog math

4 weekly walk-in counts × 90 min of sheet-vs-shelf (~6h) plus 80 vendor invoices × 6 min matching to receiving tickets (~8h)

Run telemetry

04 — What it does / 5 outputs

Matches walk-in counts and vendor invoices to receiving and leaves the variance named.

  • Variance list
  • unmatched invoice lines
  • unmatched receiving lines

05 — One run

What one run takes in, and what it puts back.

No sandbox on this page yet. This is the real input and output contract from the record, not a demo recording.

In

  • Item list
  • weekly count
  • vendor invoices
  • receiving tickets
  • optional recipe/theoretical file
  • prior-week count

Out

  • Variance list
  • unmatched invoice lines
  • unmatched receiving lines
  • chef/GM initial log
  • optional draft AP bills

06 — How it works / 40 min setup

Three steps, then it is furniture.

  1. 01

    Connect Toast and Square

Scoped authorisation, revocable from your IdP or the dashboard.

  2. 02

    Point it at the work

    Item list, weekly count.

  3. 03

    It runs

Variance list — on a trigger or a schedule, 40 minutes after you start.

07 — Features / 7 listed

What is actually in the box.

  • Count sheet from last week’s item list; photo or key-in; Storeroom is not a scale
  • Invoice PDF match to receiving tickets by vendor, date, and amount, then by line when the OCR is clean
  • Variance list: count vs prior count, invoice vs receiving; theoretical vs actual only if you maintain the recipe file
  • Exception queue for catch-weight, split cases, and vendors not on the item list
  • Exports to QuickBooks as a bill stub or to MarketMan/xtraCHEF if connected; Storeroom is not the GL
  • Line cannot be forced to zero; you adjust the count or you document
  • Does not change recipes, set plate cost as a decision, or schedule labor

10 — The money

Your hours, your hourly cost.

Two numbers: the hours this product removes at the catalog's stated volume, and the cost of an hour, which only you know.

14

You type this one. We do not know what an hour costs you.

Recovered per month

$700

14 h × $50 an hour, before the credits a run spends.

Where the hours come from: 4 weekly walk-in counts × 90 min of sheet-vs-shelf (~6h) plus 80 vendor invoices × 6 min matching to receiving tickets (~8h).

11 — Pricing

Buy it outright, or get it with a plan.

One-time

$25/mo

  • Month to month, no lock. Runs spend credits.

Per run

45 credits

$0.90 a run at the Starter rate of $0.0200 per credit, less on every tier above it.

Credit class: standard

Every run carries a published hard ceiling. A run that hits it stops and re-quotes instead of billing on.

12 — Security

Runs on nox.markets.

You type or upload into our app. Data lands in our region, is processed there, and the results stay in our app until you export them or a connected write-back exists.

Run payloads are kept for your workspace retention window — 30 days by default on Starter and Growth, 90 on Scale and Enterprise, with zero retention available on Enterprise.

14 — Detail

The long version, including what it will not do.

Food cost in a 2–8 unit restaurant group is not a recipe database. It is Tuesday count sheets that do not match last week’s sheet, a Sysco invoice that does not match the receiving ticket, and a GM who recodes both at 11pm. Storeroom is a hosted tool: you enter or photo the weekly count against the item list you already use (MarketMan, xtraCHEF, or a CSV), drop vendor invoices in, match them to receiving, and get a variance list — count vs theoretical if you maintain recipes, and invoice vs receiving always.

It does not set menu prices, does not tell you to 86 a dish, and does not accuse a cook of theft. A $40 walk-in variance stays $40 until a person initials it. If Restaurant365 or MarketMan inventory is already reconciled weekly and AP is clean, skip it. Buy it when counts still live on a clipboard and invoices are a pile next to the printer.
